    Oh, I am always excited to see an e mail from you all. Tonights really made me smile and wish I could be there. Some day I hope to visit. My daughter has just moved to Calif. so that will give me a good reason to leave Arizona and come west.

    The big hat day looked like soooo much fun.

What We ate for dinner last night😍Eggplant Parm What We ate for dinner last night😍Eggplant Parmigiana. 2 eggplants 1 1/2 mozzarella balls Basil Tomato Sauce Parmesan cheese. Slice eggplant length way.Salt, the pieces, and let them drain in a colander for a couple hours. Wipe off water. Fry in olive oil over low to medium flame each side until golden brown.This takes some time, but you really can’t walk away from it. Next assemble your eggplant slices put some tomato sauce on the bottom of the pan then eggplants then tomato sauce again add some torn mozzarella and grated Parmesan cheese. Continue the process until all your eggplant slices are gone, bake 325 oven for about 45 minutes! Bon appétit🥰 . . #eggplantrecipes #eggplantparmigiana #dinnerisserved
