Those of you who have been following me for awhile know that our home was featured a few years ago in ROMANTIC COUNTY LIVING and THE ROMANTIC PRAIRIE COOKBOOK by FIFI O”NEILL.

The editor of that Magazine MADAME FIFI O’NEILL started a new magazine awhile ago only to be halted by the PUBLISHERS for some unknown reason!It was a BEAUTIFUL publication and guess who took the editors photo holding my bunny HARRY! I cannot tell you how many searches I get for WHAT HAPPENED TO PRAIRIE STYLE MAGAZINE!

    This looks like a great read Elizabeth, thank you! Love the digital world for all the inspiration we can draw from it. It seems you and I are still on the postcard hunt..I expect it will be another two weeks. Post can take months to arrive when it starts traversing the Vietnamese system. You do not want to get me started. I imagine, when we least expect it, when they are all long and forgotten, they will arrive. Won’t that be fun! Sending you warm wishes from Saigon… Jeanne xx

    I have always found Fifis’style a tad bit too “sweet” for me, but this looks different and I will definately give it a chance. Thanks for the heads up.

What We ate for dinner last night😍Eggplant Parm What We ate for dinner last night😍Eggplant Parmigiana. 2 eggplants 1 1/2 mozzarella balls Basil Tomato Sauce Parmesan cheese. Slice eggplant length way.Salt, the pieces, and let them drain in a colander for a couple hours. Wipe off water. Fry in olive oil over low to medium flame each side until golden brown.This takes some time, but you really can’t walk away from it. Next assemble your eggplant slices put some tomato sauce on the bottom of the pan then eggplants then tomato sauce again add some torn mozzarella and grated Parmesan cheese. Continue the process until all your eggplant slices are gone, bake 325 oven for about 45 minutes! Bon appétit🥰 . . #eggplantrecipes #eggplantparmigiana #dinnerisserved
